A cake for rainy afternoons



Is there something better, than sitting in front of a warm oven and watching a cake grow? Who wants to be spontaneous and bake one right now? Try this one! In German it’s called “Sandkuchen” which means as much as “sandy cake” ;). It’s quite simple and most of the things you need, you will have at home…

You need:
4 egg, 2 yellows of an egg, 2 withes of an egg (so all in all 6 eggs)
1 pinch of salt
300 g sugar
1
grated lemon peel (you can also use orange peel)
200 g flour
150 g corn flour
1 coated teaspoon baking powder
320 g Butter (unsalted)
some sugar powder to dust the cake afterwards


First of all, you have to make beaten eggs white. For that you need, to mix the egg withes with the salt till its firm. Afterwards it should wait in the fridge till it’s needed again.


Now mix the 4 Eggs, the yellow of the eggs and the sugar, till there is some kind of crème. 


While mixing, you can preheat the oven (it should have 175 °C), grease the backing pan and melt the butter with small heat. The mixing of the egg-sugar-mixture can take a while (up to 10 minutes)


When the Egg-Sugar-mixture is finished you fold in the beaten egg white. It works the best, if you do it by hand.


Now is also the time for the flour, the corn flour, the baking powder and the lemon peel to join the egg-sugar-mixture.
The lukewarm butter should now be mixed into the cake batter and it’s finished. 





Fill it in your greased baking pan and leave (by 175 °C) for one hour in the oven.
